When your home is "on the grid", an electric utility company is responsible for supplying the energy that you use in your home. If they fail to generate the electrical energy, you will experience a brown-out or a black-out. There are no batteries involved in an electrical utility. If one power plant fails to generate the needed electrical energy, the utility "hires" another plant to make up the difference. Some power plants are good at boosting their output in a hurry, while others are less able to do so.
Maria (in the Solar Energy video) was "off the grid", meaning that she could only use as much electrical energy as the solar panels were making, or as much as she had stored in her batteries.
